Breakfast change-up: Homemade granola

Starting a new rotation in the hospital is always a little nerve racking. The last rotation had finally become comfortable – you know the staff, residents and fellow medical students. You build relationships, have a schedule and know what is expected of you. They also ignore the weird sound effects you accidently make when walking down the halls.

Then WHAM! You’re meeting tons of people you can’t remember, have new responsibilities, new learning material and you need to mesh with different personalities (sigh… humans.)

Seeing as how I don’t love change, it’s not surprising that day after day I eat the same breakfast – I’m a PB&J kinda gal. At 5:30am, toast with peanut butter and jam is a great way to start the day. I decided to be wild and crazy and change up my breakfast routine with yogurt, fruit and granola… maybe you wouldn’t call that wild…just crazy!!! Regardless, I figured it was time to break free from PB&J .

It feels wonderful…! I have always wanted to make my own homemade granola and put the things I love in it – dried apples! This is an amazingly quick recipe that yields about 8 cups of sweet and crunchy granola.

While many people think granola is a health food, it is packed with oil and sugar. I cut alot of the honey, oil, and maple syrup out of this recipe leaving it healthier than the store bought version – and still very tasty!

Homemade Granola adapted from Trish Magwood’s In My Mother’s Kitchen

Ingredients:

3 cups quick cooking rolled oats
1/2 cup unsweetened shredded coconut
1 cup slivered almonds
1 tsp cinammon
1/4 tsp salt
1/4 cup vegetable oil
1/4 cup maple syrup
3 tbsp honey
1 cup dried cranberries
1/2 cup raisins
1/2 cup chopped cashews
1/4 cup sunflower seeds
1/2 cup chopped dried apples
+/- other nuts, seeds, dried fruit you desire

Directions:

Preheat oven to 325ºF. Line a baking sheet with foil and lightly oil the foil.
In a large bowl, mix together the oats, almonds, cocount, salt and cinnamon. In a separate bowl, combine oil maple syrup, and honey.
Gently fold in the syrup mixture in the dry mixture until well coated. Spread mixture onto baking sheet.
Let bake, stirring occasionally, for 30 minutes or until light golden brown. Remove from oven, stir again and let cool.
Stir in nuts, dried fruit and seeds.
Store in an airtight container for up to 2 weeks at room temperature.

The interface is colorful, has more flair, and some cool features like ‘Mixview’ that let you quickly see related albums, songs, or other users related to what you’re listening to. Clicking on one of those will center on that item, and another set of “neighbors” will come into view, allowing you to navigate around exploring by similar artists, songs, or users. Speaking of users, the Zune “Social” is also great fun, letting you find others with shared tastes and becoming friends with them. You then can listen to a playlist created based on an amalgamation of what all your friends are listening to, which is also enjoyable. Those concerned with privacy will be relieved to know you can prevent the public from seeing your personal listening habits if you so choose.
