The Long Weekend – a blueberry pancake extravaganza

For those of you in Montreal this weekend, I am sure you can agree that we lucked out during this holiday – sunshine every day!

I spent my days walking through the city, eating lobster rolls, strolling along the water, going to the Atwater Market, and best of all – making pancakes.

First we enjoyed the Old Port – a little Europe in Canada Land. Hello Instagram!

And of course – the pancakes. I was planning on making the ultimate blueberry pancakes but I didn’t have any buttermilk. So I scoured the internet to find a recipe that uses plain ol’ milk and through in blueberries for the hell of it.

They were CKA = Clark Kent Approved.

I hope you’re long weekend (or regular length weekend) was great. If you ever want to add that little extra something to your weekends, try to make your own pancakes. They are easy to make, and always a special treat!

Sunday Morning Pancakes:

Ingredients:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 tsp vanilla
1 egg
3 tablespoons butter, melted
3/4 cup fresh blueberries

Directions:

In a mixing bowl, sift together the dry ingredients.
Create a well in the center and pour in the milk, egg and melted butter; mix until smooth – but do not over mix.
Add in the blueberries and mix until just incorporated.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Party Popcorn

Forest Gump was right when he said “life is like a box of chocolates, you neva know what you’re gonna get”.

Life can be full of surprises – some good and some bad. I mean, that box doesn’t always come with a legend that tells you what filling is inside that chocolate – is it caramel? Milk chocolate? Some sort of nasty liquidy stuff that will make me throw it out but then feel bad about reaching for another but do it anyways?

While life may be full of scary unknowns that include nasty tasting chocolate, I think I need to take a big breath and remember a few things that are set in stone. Here is a list of Things I Know For Certain.

1) I have not posted in quite a while. That is for certain.

There are many reasons for such a catastrophic event (some good and some bad) but we will just pretend I was on a wonderful vacation on a remote island that had no internet access but all the fresh exotic fruit I could want. That’s exactly what happened….

2) That new HBO show GIRLS is awesome – and as with sex and the city ”which character are you?”… I am SO the uptight roommate who hates when people are late. Ha!

3) I love sprinkes…or jimmies. Whatever you wanna call them – I love them. Throw them on ice cream, cakes, cookies or yes…even popcorn!

4) It is almost summer. THAT is a fact. Unless there is some freaky deaky solar storm that turns summer 2012 into the Ice Age it is most definitely gonna be summer soon.

5) I am stressed. No one can argue with that one.

6) Call Me Maybe by Carly Rae Jepsen is way too catchy for its own good.

7) My dogs are super cute. Say hello to Dylan and Daisy – they are lovers.

8 ) My friends are awesome – They are wacky, silly and sure know how to dougie.

So while most lists will go to 10 I’m gonna leave you in suspense of Things I Know For Certain. And maybe I’ll share a few more tidbits at a later date.

What I will leave you with is party popcorn! I am back blogging which is a reason to celebrate…right?
